Brother Tommaso's Lemony Garlic Chicken


Ingredients:

Cornstarch
1 lb (about 2 - 8 oz) boneless chicken breasts
Extra virgin olive oil  (EVO)
1 lg lemon
3 Tbs. Brother Tommaso’s Better Recipe Garlic Butter
1 cup unsweetened lemonade
2 Tbs. rice-wine vinegar
Salt and Pepper

 

1:  Zest the lemon and place aside.
2:  Prepare a wide bowl with cornstarch for dredging the chicken
3:  Slice chicken breasts into 1 inch strips and dredge in the cornstarch, pounding each one out a little to flatten and tenderize the strips.  (this also embeds the cornstarch better)
4:  Heat enough EVO to cover the bottom of a 10 inch sauté pan until a drop of water will sizzle.  (DON’T OVER HEAT OLIVE OIL)
5:  Place the dusted chicken strips in the oil and brown on both sides.  Do this quickly, and turn down the heat.
6:  Halve and squeeze the lemon over the chicken, turn the chicken once.
7:  Add the lemon zest and Brother Tommaso’s Better Recipe Garlic Butter and sauté, coating all the meat.
8:  Add the lemonade and rice-wine vinegar and bring to a fast simmer.  The cornstarch will thicken the mixture.

Once the sauce has thickened, season with salt and pepper to taste. 

Serve with your favorite green vegetable.  (serves 2)

Brother Tommaso's K.I.S.S. Quickie Chicken

Ingredients:
1 lb (about 2 - 8 oz) boneless chicken breasts (ALT: boneless thigh meat
Extra virgin olive oil (EVO)
2 Tbs. Brother Tommaso’s Better Recipe Garlic Butter
1 Tbs. soy sauce or Liquid Aminos

1: Slice chicken breasts into 1 inch strips pounding each one out a little to flatten and tenderize the strips.
2: Coat the bottom of a 10 inch sauté pan with EVO and heat until a drop of water will sizzle.
3: Place strips in the pan and brown on both sides. Do this quickly, and turn down the heat.
4: Add Brother Tommaso’s Better Recipe Garlic Butter and the soy sauce or Liquid Aminos and sauté - coating all the meat. Saute. (about 2 minutes)

Serve with steamed rice. Simply.
